What is Couscous? Couscous is a fascinating food that's often mistaken for a grain, but it's actually a type of pasta. Originating in North Africa, it has been a staple of Maghrebi cuisines for centuries. Made from semolina—the same coarse flour used to make many other pastas—it comes in various sizes.


For this recipe, I've chosen pearled (or Israeli) couscous because of its satisfying size. Unlike the tiny granules of traditional Moroccan couscous, which resemble large grains of sand, pearled couscous is significantly larger. Its name comes from its resemblance to small pearls, and this substantial size gives the salad a heartier, pasta-like texture that truly elevates the dish.


Couscous has a very neutral flavor, which makes it incredibly versatile. It's a great "blank canvas" that can be used in a variety of dishes. It's commonly served with stews or tagines, used as a base for salads, or served as a simple side dish. Couscous can typically be found in most markets, shelved alongside the other dry goods like rice, quinoa, and various pasta shapes.


Ingredients:  

8 ounces (227g) pearled couscous, cooked

1 cucumber, diced

1-2 tomatoes, diced

1 shallot, finely diced

2 Tablespoons fresh mint, chiffonade (thin, long ribbons)

3 Tablespoons extra virgin olive oil

1 Tablespoon red wine vinegar

salt and pepper to taste


Method:

Cook the couscous according to the package instructions. Set aside to cool. In the meantime, finely dice the shallot, cucumber, and tomatoes, and add them to a large bowl. Add in the couscous, olive oil, vinegar, and mint. Season with salt and pepper and enjoy.


This salad is a wonderful blank canvas for creativity. Feel free to add your personal touch. For a rich, nutty flavor, try toasting a handful of pine nuts and stirring them in. For a creamy, tangy addition, crumble in some goat cheese. For a slightly different flavor profile, you can easily substitute the fresh mint with a generous handful of chopped fresh parsley.
